Caramel Stuffed Dark Chocolate Cookies+ Orange Zest Sugar

Hope you all had a spook-tastic Halloweekend and you’re not too candied out. We’ve got a long holiday season ahead of us and that means sweets on sweets on sweets. We should really be thinking of Halloween as the kick off to sugar season. You have to start building up your sugar tolerance now so when Thanksgiving hits, you’re ready to dominate the dessert table. Another slice of pumpkin pie? Don’t mind if I do! You’re friends and family will be so impressed… just kidding.

They will, however, be impressed when you show up with these awesome cookies. Dark chocolate, oozey caramel center, and orange zest sugar to brighten it all up. In my opinion, these are slightly more Halloween friendly. The dark cocoa powder turns these cookies almost black and with the orange sugar topping, they’re totally appropriate.

Recipe

3/4 C (1.5 sticks) Unsalted Butter

1/2 C White Sugar

1/2 C Brown Sugar

1 Egg

1 tsp Vanilla

1.5 C AP Flour

1/2 C Dark Cocoa Powder

1 tsp Baking Soda

1/4 tsp Salt

Rolos or other fun-sized chocolate/caramel candies

2 tsp Orange Zest

2 TBSP Sugar

Preheat oven to 350º F

In a bowl with an electric mixer, combine butter and both sugars, whip until fluffy.

Add egg and vanilla, mix.

Add flour, cocoa powder, baking soda, and salt, mix thoroughly.

Scoop about 2 TBSP of cookie dough and press your candy into the middle, forming a ball around it. Place on cookie sheet about 1in apart.

Bake for 7-10 minutes.

Combine sugar and orange zest for topping.

Allow cookies to cool for 2-3 minutes, sprinkle with sugar.
